Picnic recipe: Crispy Cheese Snacks

With The Great Bourne Picnic just around the corner (August 1st, make sure it’s in your diary!) we’ve asked some local residents to share their favourite picnic recipes to whet your appetite and get everyone in the picnic mood.

First up is local Bourne resident Megan, who still makes these easy snacks from a recipe book she made at primary school! Why not try using Millie cheese from local producer Cheese on the Wey?

CRISPY CHEESE SNACKS

Ingredients:
110g plain flour
Salt & pepper
110 g butter
110g cheese (finely grated)
1 egg (separated)
25g Rice Krispies

Method:

Put flour, salt and pepper into a bowl. Rub in the butter until it looks like breadcrumbs. Add cheese and yolk, mix well. Knead lightly. Roll out on a floured board to ½ cm thick. Cut into rounds with a small cutter. Beat the egg white. Coat each biscuit with a little egg and put the Rice Krispies on top. Bake in the oven 200C for about 20 minutes. Cool on a cake wire. Enjoy!
